Would small versions of the golems be accepted as familiars for apparel? I've always been a bit fond of the rabbit meat golemn, and perhaps a bee golemn over the shoulder.

Sure! The golem concepts are a part of the BeastKeeper world, so they will fit in nicely as companions.

Backgrounds are a type of apparels, so their submission is pretty much the same. Just turn on "This is a background" switcher in the apparel submission settings. The size is 897x499 px or anything bigger with the same ratio.

If I make a base template of say a sabertooth tiger as a skin for the Puma, can I make drastically different variations of it (brown with spots, black with tiger stripes, etc) and upload them as different skins?
