I'm suprised no one has suggested Wargs yet. :D
I'm less of a Kelpie person, and more of an Each Usige. How's that for some obscure critters!?
We've already got our felines (The puma), so a canine would be stellar.
Though, I'm looking at the pets behind the lady who works the adoptions:
I see, from left to right, across the top: Gryphon, unicorn, dragon, roc, Wolf (warg?)
Bottom: Puma, Pegasus, Manticore (Chimera? Missing the goat's head), slowbro...>.> and another dragon.
Maybe it's clues for the future! :D
ETA: Ooh, look, over on the left there's a statue of a stag of some kind!

LOL I just saw that... But it's definitely slowpoke.
@Kayla-La If they did that they'd need to create whole new areas just for water - to prevent people from just sneaking past guardians and taking the chests

They could just add beaches, where you can slip into the water, but not touch anything outside of it, so you'd need to take the land route anyway, to reach things like chests and whatnot.
