Yes, they are cumulative, so the ten spaces are added above the spaces added by a lvl 5 stable. It won't be wiped out when you upgrade.

So i can use the expand stable scroll even if i only have a lvl 4 stable? Sorry, im just wanting to make sure I am understanding

Genes that cause negative status effects (e.g. silly, fragile bones) will always appear red.
I'm sorry, but you probably have wasted your foods. They'll only have half the effect (or 75% effect if it's a small downgrade such as slowminded) and it's way more worth using them for pets who have good genes since they'll also boost the food bonuses.
