With this event, I suddenly realized that the pets I'd bred to give to events had disappeared from the list of pets I'd bred, including the harvester for Carpo and the lykos for the Etelia. I realize this was probably done intentionally, but...why? I enjoy seeing a record of all the pets I've made, even those that no longer exist in-game. Besides, the pets I've sent to the SPSB still appear on the Pets Bred page, so I don't quite understand the difference.

More specifically, I had hoped to still be able to see my first Etelia even after the pet itself was lost, rather than have it disappear without a trace. I mean, it seems a bit of a shame, having done so much work to gain the pet and to not even have its picture and a name left of it. Is there a specific reason for this decision?

We added the event sacrifice pets back to the list. They were removed from there intentionally, but you're right that there's no difference between them and pets sent to SPSB. Just like SPSB pets, they won't have their profile available, but their image, name and level will be displayed in the list.
