Hello,
Dashes on the genetic chart mean you have not yet revealed the gene in that slot. Genes are revealed randomly, so some rows will be only partly revealed if you haven't researched all the genes.
It doesn't matter if dominant and recessive genes don't match. Only the dominant gene is expressed anyway.
GP3 means the pet gets a +30 points boost to all characteristics. You can get GP by breeding pets at level 50 together. Other rules to gaining GP are described in the FAQ.
Green is used to mark the dominant gene, and does not affect the probability of gene inheritance. Both genes for each slot have an equal probability of being passed to offspring.
Only dominant genes affect the pet.
It seems you're new to pet breeding games, so I'd suggest thoroughly reading the FAQ. Timain has also put together a wonderful guide for newbies here that you should take a look at, and I'd recommend checking out the Genetics section especially.
