My inventory was full when I defeated a Guardian Statue. Is there a way for me to pick up the items I couldn't pick up now that I've cleared my inventory like with normal chests?

You can not get the items that were the reward from the guardian now that it has been defeated.

When about to battle a guardian, there will be a message in red letters that warns your inventory is full. Right then is a good time to stop everything and go clear out atleast three spaces for whatever the guardian drops.

On a related note, if this happens with chest they can be returned to and items picked up once space is made IF you have not left the island.
