Hey, so I'm pretty new to BeastKeeper and I've mostly just been randomly breeding unicorns, but like 70-80% of them turn out male. So I was wondering if this is just coincidence or actually a thing?

It's probably just a coincidence. The chance of breeding a male or female pet is an even 50/50 (50% male, 50% female). You might just have pets that only want sons.
