On the Boards/Forums page I feel certain subforums would be more attractive to players if the page showed the title of the topic most recently updated instead of the username of the player who made the last post.

Hm, maybe. I know I personally like seeing the usernames because then I see if someone posted in the subforum after me or after the last person whose post I saw.

If multiple people were to post in the same topic in a row then that one thread would stay as showing as most recently updated which may look like no one else has posted there since the first post that brought it to the top. Maybe if it showed both the title and username?

I think both title of the thread and time of last posting would be more useful.

I agree. Time of posting would be helpful. To be honest, as a Mod patrolling the forums, it would make it much easier if I could see the time when a forum post was last updated (and by whom!).
