The problem with this is that my trigger is set for "Himalayan + Cat" genes, which said Gryphon does not have both of those. Is this some sort of glitch or does it always do this?

I checked your breeding triggers, everything seems to be fine. You need to select "All checked" option instead of "At least one" in order to check for both genes at the same time.
