I just got my 1st level 50, but her HP bar says 0/500 & I ran into 50+ monsters on the last several islands so will she level up above 50 or what?

No, the monsters are just still the same level range as before, so +-5 to your level (so at 50 you could run into 45 to 55 mobs). You don't get any exp for defeating those though.
