For some reason I only have 1 avalible quest even though I believe I'm supposed to have 7 (could be 5 but I think everyone one's premium)

You already finished all other quests for this day. Your daily number of quests is 5, you need to build Embassy to have 7 quests available per day.

No, I hadn't taken on any quests that day. The last time I took quests was the day before.
