Can gold coins be traded between players for pets or items?

No, they can not. Trades involving Gold are limited to the owner of the Gold using it to buy requested items from the Premium Shop and sending them to the other person involved in the trade in return for whatever the deal was for. If you're asking because you have gold then I wouldn't mind a PM working out a deal for an Expand Stable Scroll or 1 Month Premium Subscription :P
