Total newbie here, what exactly is a double deviant? I assume it has someting to do with all the cool, like, mutations creatures can have- like when they have different body parts

I love most of the Gryphon deviants because of how bright and deep their color mutations are, and the bonus that pattern mutations change the 'bird' part of the Gryphon.
But ever since coming back again the unicorn double deviants have been growing on me,
