I am on a quest, and this is what I need to do:

Sports Association is looking for an agile (42) Gryphon to participate in a competition.

I don't know where exactly to go to complete this quest, so could please point me in the right direction? I am still learning the site and don't quite know where everything is at yet.

If you look on each pet's page they have stats.

Agility is the one you're looking for here. You can buff stats by levelling up your pet, or feeding it magic food.

If you go to Pet Trades, you can click on the little plus sign and get an Advanced Search function. You can type the agility stat value in and search for gryphons by clicking the checkbox next to it.
