Hi hi :) Sorry if this has been asked, but do you have to build the buildings in order? And how do you get the blueprints? For example, I am able to acquire a Level 4 Ridinghall, but I have not yet build the Level 1 Ridinghall. Do I have to build all three previous levels first? 

Also is there a way to 'make' pets? Or will I always have to get them from other players or capture them? I stupidly sent my pets on quests and things so can't actually do any exploring so not sure what to do xD

Yes you must build the buildings in order, unfortunately. Blueprints can be found in chests on explore, bought cheaply on the Trades or privately from players like me whose invenories are full to bursting :)

You can ... breed them? I also recommend building Warehouse 2 and Stable 2 straight away :)
