So, I defeated one of those pink/purple boss worm thingies, then moved down into where I assumed the treasure chest would be, only instead of a treasure chest, I found another pink/purple boss worm thingy guarding the chest. Is this supposed to happen?

This happens occasionally because the islands are randomly generated.

I've had that happen. Like Lililira said; it's because of the randomness.
It's also happened that the first step on the island is a battle. Not fun when the monster is much higher leveled than yours. -_-

I had that happen once, and I found an invisible treasure chest in the water.
No screenshot so no proof, but check around just in case.
I think the 2nd guardian area spawned near or on top of the first one, and the chest got covered with w/e.

Maps are generated randomly, so you can get a few bosses guarding an only chest.
