Just like the title says, There would be a slight chance for the offspring of two beast to have the color/genes of the granparents (of either side) and a very low chance of reciving Great grand-parents coat colors - It would help keep the genes diverse and unpredictable.

We actually would like to keep it more predictable :) There's enough randomness in the natural Punnett square mechanic which is currently in place. For cases when you'd like to bypass the rules of in-game nature, you may try visitng the Forest Alchemist or using a mutagen. Just remember that the only way to get a pet with specific genes is through breeding.
