Can you sell them to NPCs for some quick cash, or do you just have to sell them on the item trading thing? I joined yesterday and I can’t find the NPC selling thing but I might as well try

Well, you can find items lying around on Explore, but NPC's aren't really here to buy them. You can however sell them to other players.
Go to Item Trades and click the Create Lot button at the top under the picture.
Whoever calls on the name of the Lord shall be saved.
