In explore battles against monsters, I'm seeing battle details like "your pet goes berserk!" What gene(s) cause this?

If you mean your pets are going berserk, in pumas and gryphons it's literally called the Berserker gene. In dragons, it's Boiling blood.
If it's the monster you're fighting, some monster spawn with the beserker genes, you can find an incomplete list here: https://beastkeeper.com/monster-codex
