I'm not sure that I understand what do you mean by food log and what is the difference between the diet settings itself.

Pet's stats will increase according to the diet on the moment of level up. The diet effect does not depend on how much does your pet is being feed with the certain diet: it will be the same either you have changed the diet in a minute before level up or it stayed unchanged for a week.

oh i thought that the pet gained stats form eating normaly each day

but still a "your pet" gained this during level up break down  would be nice. (kinda like pokemon do o.o i know im a nerd)
