Do they reset? Do I get more automatically at some point?
Or do I need to do something to get more of them?

A new set will appear every day, after the update at midnight (see the game time in the top corner). Pets that are currently on a quest when the update happens will stay on it and you'll get the rewards when they're done.
You can build the Embassy to get 2 extra quests per day (7 in total).
