I have no bird catchers available when up until now I've always had two or more as options but this has been going on for a couple days. Is it random and I've just been getting the short straw? Seriously I want to catch a roc but no bird catchers...

You need to hire new catchers when those that you have run away after facing wild pets which were too strong for them. Please click "Hire one for 200 coins" link near the type of the catcher that you want to purchase. You can hire any number of catchers at any time.

This is similar, but not the same: I have been unable to use anything but observers for several game months now. It says I have other catchers and I have tried Hiring more

Please check if you have enough licenses and some free stable space. You need to have one available license and one stable space for each catcher that you send.
